			<content:encoded><![CDATA[<p>Found a cool recipe for some home made raviolis from <a href="http://www.chefmichaelsmith.ca" target="_blank">Micheal Smith</a> while he was in Italy. Seemed easy to do, so, why not?</p>
<p>The recipee is pretty simple: spinach and ricotta cheese mix with an egg yolk in the middle.</p>
<p>One trick that comes to mind for next time i do this is to cool down the spinach/ricotta mixture so it holds its shape better.</p>

<p>Gotta watch the pasta&#8217;s thickness to make sure the yolks are still runny by the time the pasta&#8217;s cooked.</p>
<p>I served them with brown butter and a lot of parmesan cheese. Fresh sage would&#8217;ve been good too.</p>
<p>In conclusion, they tasted amazing. Just need to work out a few details in the making. Second try will be much better.</p>
