Fancy raviolis

Found a cool recipe for some home made raviolis from Micheal Smith while he was in Italy. Seemed easy to do, so, why not?

The recipee is pretty simple: spinach and ricotta cheese mix with an egg yolk in the middle.

One trick that comes to mind for next time i do this is to cool down the spinach/ricotta mixture so it holds its shape better.

Gotta watch the pasta’s thickness to make sure the yolks are still runny by the time the pasta’s cooked.

I served them with brown butter and a lot of parmesan cheese. Fresh sage would’ve been good too.

In conclusion, they tasted amazing. Just need to work out a few details in the making. Second try will be much better.
